Semitic/Vulgar Conversational Literary Koine
Revelation most of Paul Hebrews
Mark Matthew Luke-Acts

I'm not sure if this corresponds exactly to 'ease', but it is probably a good approximation since all such determinations are bound to be somewhat subjective. I think just about every 1st year Greek student is encouraged to read the Johannine literature first.
The JACT "New Testament Reader" from Cambridge Press (ISBN: 0521654475) is affordable and would supply an ample number of NT texts with basic helps.
