Tony,
If you haven't already done so, you will need to look at the text in
full and in both the Septuagint translation and the so-called
Theodotionic translation, since they are rather different. The
Göttingen edition of Ziegler has recently been superseded by the
Göttingen edition of Olivier Munnich (though only the LXX text has been
revised).
For the verse in question you can still use Rahlfs, since nothing of
substance has been changed in it by either Ziegler or Munnich.
Not only do the verbs you cite belong to different versions (LATREUW =
LXX; DOULEUW = TH), but their grammatical subjects also differ in the
two.
The lines in question I would gloss as:
LXX: And to him was given royal authority and all the nations of the
earth—according to kind—and all glory ministering (LATREUW) to him.
TH: And to him was given rule and honour and kingship; and all the
peoples, tribes, tongues shall serve him as slaves (DOULEUW).
On the two verbs there are no variant readings.
