For learning NT Greek (which, I remind the neonates, is a small subsection
of Koine) I always recommend William Mounce's excellent _Basics of Biblical
Greek_. It's particularly helpful in teaching you the English grammar
first, then introducing you to Greek. Many other textbooks assume a
knowledge of structural grammar that is largely absent even among college
educated persons. Also, following the natural mode of learning a language,
he introduces nouns first and eases you into verbs, all using actual
scripture instead of conjured-up sentences.
As to vocabulary lists, I refer you to the excellent material available
through the Perseus Project hosted by Tufts university. They will make
vocabulary lists for any Greek (or Latin, for that matter) text in their
considerable library. I believe the most up-to-date NT text they have is a
revision of Westcott-Hort or a late Tischendorf. The tools to make
vocabulary lists are found under the Classics section "Lexica and Other
Aids". They have free access to both Liddell-Scott-Jones full & short, as
well as a few older grammars.
