I have spent some time upon this subject, and have found the Early Church Fathers to be a great deal of help as far as the Septuagint compared to the Hebrew. Origen and St. Jerome do exegetical works with a number of texts. Obviously Origen put together the Hexapla which put the Hebrew text, a transliterated Greek from the Hebrew, Aquila, Symmachus', Septuagint, and Theodotion's Text all into columns. Even though there are no longer any existing versions of the Hexapla other then in Syriac that are still preserved, we do have the writings of Origen and St. Jerome who have quoted the Hexapla and used it in their works. St. Jerome especially compares many many times the Septuagint with the Hebrew text that he had in the 4th Century.
I totally recommend St. Jerome's works to get a unique glimpse into the Greek Septuagint language.
