On Mac issues:
The Classical Greek Unicode Inputer is indeed a little quirky, and as
Carl pointed out, can have some clipboard issues. I have written an
application with a similar function, but in Cocoa which runs natively
on Mac OS X and has the potential for enhanced and automated clipboard
and even pasting options. I also have a couple OS X keyboard layouts,
one using the so-called "Standard Mapping Initiative" used by Teknia,
one using the Helena keyboard mapping, and Randall I'd like to make one
that uses the standard modern Greek keyboard mapping as a base.
I created the application for keying in extended Unicode Greek and the
keyboards to use as tools for my own dissertation work, where I'm
keying in quite a bit of Greek. But, given the discussion here, I'll
try and get them into a form to be publicly available in the next day
or so.
With a keyboard layout installed, changing to Greek input on a OS X is
a simple as Command+Space to toggle between two keyboards.

Cheers,
Joe Weaks
