In Tucson you have the University of Arizona which offers courses in Greek. Most of them seem to be oriented toward classical Greek (not a bad idea to begin there), but I'm sure they could point you to someone / someplace where you could learn koine.
As regards your second question, you might try the groups at sites such as Yahoo (www.groups.yahoo.com) or MSN (not sure of the URL for this). They have groups for almost everything including many dealing with religious topics. I would be wary, however, since many of these might well be classified as "kook" groups.
