Another option for the 1,000 most common words--if you're using the Biblical Greek Vocabulary Cards (Vis Ed, Gromacki--these are fairly widely used in 1st year classes, at least I the States), you can create a database file using the card numbers and then just sort by number.
A good database, esp. one that understands Unicode, is a far better tool for this than Excel. I've found FileMaker to be very well suited for handling all sorts of Greek-related data--and it runs on both Windows & Mac. The newest v. 7 which came out this past year also does Unicode.
