[B-Greek] Reliability of the Greek Text

A friend recently questioned me about the veracity of the Greek text
from which I have been performing my translation (UBS 3rd/4th ed.). I
have never been confronted by this question and have, somewhat naively,
always accepted the text to be very accurate with no investigation. Now
that my own curiosity has been piqued, I am hoping that some of you
might be able to point me to resources that will help me to have a good
understanding of the reliability of the provenance of the Greek text
that we all know and love.
As well, if you could provide some explanation as to why you have
personally chosen the UBS and/or NA text, it would be greatly
appreciated by this eager novice.
