[B-Greek] Knowledge of Ancient Greek

I haven't read it since 1984- so that's 22 years- but if I recall 
correctly Werner Jaeger's brilliant 3 volume Paideia does discuss how 
learning and teaching were done in ancient Greece.

I would start there if I were you.  If he doesn't discuss it he will 
point you in the right direction.
