I'll comment on the Isaiah passage since I'm writing the Brill Septuagint commentary on Isaiah.
Some resources that might be helpful:
To see how a Hebrew word is translated into Greek in a particular instance in Isaiah: http://ccat.sas.upenn.edu/gopher/text/religion/biblical/parallel/40.Isaiah.par
To see the sense of the Greek of Isaiah:

The Hebrew SHALOM and SAR are in fact translated, but the syntax of the Hebrew was read quite differently.
His name will be called "Great council's messenger." For I will lead peace (SHALOM) onto the leaders (SAR); peace and wholeness to him.
Now with that said, many Greek manuscripts have readings that sound more familiar to most of us, e.g.,:
θαυμαστος συμβουλος θεος ισχυρος εξουσιαστης αρχων ειρηνης πατηρ του μελλοντος αιωνος
But these readings are considered secondary.
