While it is true that ARTOS is masculine gender and TOUTO is neuter and thus does not agree with it, I think it would be a mistake to conclude that it does not thereby indicate the bread. The demonstative is rather far removed from its referent and is much closer to SWMA with which the bread is being equated so that the gender of the demonstrative is attracted to the gender of SWMA.

I posted this on another biblical group, but none of the answers dealt with the issue from the perspective of the language that I was looking for. I unsuccessfully tried searching your archives.
According to the Greek grammars, the demonstrative adjective and prounoun agree with their antecedent in number and gender. In the words so-called words of institution (Luke 22:19) the demonstrative pronoun 'this' (touto) agrees in this manner with the neuter noun soma (body) and not the masculine noun artos (bread). Could we conclude that the body (soma) that the demonstrative pronoun is pointing to is not the bread (artos) [since it would have been 'outos'] but to some other entity. Could the body (soma) be pointing to the people gathered?
