Just a guess here: Could ESQEIEIN be from an earlier spelling of ESQIW ("I
eat") -- and would there have been an earlier OG spelling of ESQIW that used
an extra epsilon (i.e., ESQEIW)? If so, maybe this is how OG used to spell
the pres act inf, "to eat."

See a similar word in the NT ("to eat/to be eating"  - ESQIEIN) in Matt
12:1, Luke 12:45, Acts 27:35, 1 Cor 8:10, 1 Cor 11:22, and Heb 10:27.
