My advice: Find a partner who also wants to learn Greek, establish
a schedule, and meet once a week to track progress, and keep each
other on schedule.

Expect to hit a vocabulary wall about 3-4 months in where you
might feel overwhelmed. Slow down a little at that point.

The textbook will not be an issue in this case.

I am looking for a good New Testament introductory Greek textbook, and

while there are a number of them out, I am seeking a consensus

regarding which one is most "user friendly."
