Some
comments.

Every
scripture/All Scripture

Both
renderings are grammatically acceptable. Some may argue that the noon γραφή does not have an article, but
this is not conclusive as it is evidenced by many other cases in the Greek
Scriptures. See Ex 12:47; Deu 13:12; Mat 2:3.

In every
case, "scripture" here refers to the sum of the "sacred writings" Timothy was spiritually
nourished with.-2Ti 3:15.

On the
second point, I think that both renderings are both acceptable. The American
Standard Version says: "Every scripture inspired of God is also profitable for teaching." Both the
English translations of the Peshitta I own do have a similar rendering, which
could mean that the ancient Peshitta translators understood the verse in this
way.

But, the majority of the English
translations follow the classic rendering: "All scripture is inspired by God
and is useful for teaching" (NAB). Interestingly NET gives the following
comments: 'Some have connected this adjective in a different way and translated
it as "every inspired scripture is also useful." But this violates
the parallelism of the two adjectives in the sentence, and the arrangement of
words makes clear that both should be taken as predicate adjectives: "every scripture is inspired.and useful."'
