I would suggest the Didache, it is very simple, reminiscent of the Gospels,
Epistle of Diognetus is fairly simple, the Shepherd of Hermas is quite easy
to read, it will take you all semester to read the entire document,
probably.

Hello B-Greekers, I'm a lurker here but I have a question.  I'm taking an
Early Church History class this semester which deals with the time period
covered by Eusebius in his Ecclesiastical History (Jesus up to 325ish AD).
I get to write an essay on the topic of my choice, and since my professor
loves Greek I'd like to use it as an opportunity to improve my fledgling
Greek skills.  I'd like to know which of the Ante-Nicene writings has simple
Greek (at least compared to the rest of the corpus) that I may have a hope
of picking through.
