I think I would call that "spoiled milk" rather than meat or even good
milk since the legacy fonts have been around too long. Sorry, but whatever
keyboard they are to use later is what they should begin to use from the
beginning -- and I do mean "whatever keyboard" -- just choose one. I happen to
think that the phonetic keyboard is easiest, but others may have a different
opinion.

Seriously, though, I start my students typing Greek from about week 2.
But I don't make them do polytonic, or even (yet) Unicode. For a simple start
they can use SPIonic, with an easy keyboard. If they survive year 1 Greek, then
they can go on to something more advanced.
