I have found the easiest way to enter unicode in Windows is by using Tavultesoft's Keyman 5.0 (it is free for non-commercial use). Just add the classical Greek keyboard and then simply just type beta code, the accents are properly combined and the final sigmas are automatically converted when you add a space or punctuation. I have almost finished typing in the Didache in Unicode using this method and it is very easily done.

Yeah, I'm still learning which keys are which with the Greek. For example,
the final sigma is the "w" key (which I would have expected to be omega),
and theta is the "u" key, which seems a bit strange to me. The "q", which
we use for theta, is a semicolon, "f" is phi, which makes sense to me as
does the "z" for zeta and "x" for chi, but the "v" is omega. It takes a bit
of getting used to. :-)
