Hello! I found this forum while searching the internet for authentic Chinese cooking. I'd very much like to make some authentic Taishan dishes for my dad, for his birthday next month. But I know very little about the culture or history. I grew up with wonderful Cantonese dishes, but I don't know which, or any, of them might have been Taishan recipes. I'd love to surprise my dad with some food from his childhood. Rare ingredients or tough cooking methods are not a problem, as I'm pretty comfortable in the kitchen.

Here are some dishes I suspect might be Taishan: Am I right?
- steamed egg custard with dried shrimp ("dun dan")
- salt steamed chicken ("yeem guk gai")
- yellow eel in a claypot?

Or better yet, can someone recommend a good cookbook?
