The problems of miss-matched supply you describe are in large part due to:
1) Growing food on too large a scale. Besides the awful ecological damage,
the food is marketed by systems beyond the farmers' control and (this
leads to point 3) growing more than the farmer can use in alternative,
backup ways.
2) Related to 1), monocultures and
3) separation of livestock raising from plant crop production. If your
friend at the farmers' market had livestock, he could absorb the loss of a
few bushel of unsold squash.
Since I'm pretty sure you know these things, I take it that your posting
was intended to get someone else to say them. Glad to oblige.
