What do you mean by fruit seedlings? If you are talking about perennials trees or bushes, why don't you plant them directly in the ground in their permanent spot. Fall transplanting is the best in cold climates. The roots actually do get established during the winter even though the tree is dormant and trees transplanted in the Fall fare better, in the first few years,  than trees transplanted in the Spring. 
As much as possible, I always transplant in the Fall. 
Wait until the trees are dormant, then go for it. Last year, I transplanted all my Spring grafts, end of November, when there was snow on the ground even though the earth was not frozen. It works well for apples, pears, brambles, roses and what not.

  Hello All,

  The local "lawn kid" will be leaving me some leaves to bury my fruit
  seedlings in for the winter, but a question crossed my mind.

  I have a small hobby greenhouse.  If I cover that greenhouse with a dark
  tarp, and open the vents, will that prevent the thawing and freezing of
  fruit seedlings?

  Anyone tried this?  Since this is my first winter with the hobby
  greenhouse, I do not know what they are like inside during the winter,
  unheated, and covered with a dark tarp.
