Hi Roberto -

I'd take some of your soil and add it to a good compost. Compost has more
organisms per gram than soil does. So you are going to get a better inoculum
using compost.

You need to make sure there's enough aeration to offset the use of oxygen by
the microbes. You have to balance oxygen use with aeration rate. That's why
it might be better to buy an existing machine. The KIS machine is really
simple, and is easily shipped.

Otherwise, you need an oxygen probe to measure oxygen in the tea to make sure
it stays aerobic THROUGH THE WHOLE BREW. The critical hours are 8 to 14 in a
5 gal brewer, or 14 to 20 in a larger size brewer.
