Yes, the bucket method is an easy way to start and
the article is great. However, there is a reason there are so many great
commercial machines all of the sudden. One has to remember that the Taunton
article was written at the dawn of infancy of CT even if it was only a few years
back!
Ted, re bubble size....let's see what Dr. Elaine's
research has shown. My memory is not as good as it was, but last year there
was a flurry on this list regarding bubble size and if I am not mistaken the
conclusion was a bit bigger than the aquarium stones is needed.
Yes, there is more surface area in
smaller bubbles, but energy is also key here in stripping out the
microbes. Again in my experience, testing bucket systems vs those with bigger
pumps is that you get much better tea with more aeration.
