Time versus money.  If you have patience, and make sure the organic matter returns to aerobic conditions as soon as possible, you can make good compost out of almost anything.  Even if you pile OM 40 feet high, it will, eventually, turn into compost as the organisms finally form structure and let oxygen move into the middle of the pile. 

It's when we try to speed things along, and make compost in 6 weeks that we get into all the craziness of turning, and starting mix, and pile height.
