Mike,
I just got back the final SFI report in the mail on sample 2 and it 
had Hyphal diameter of 4, honestly I dont know how I acheived that 
but when I do I will let you know, here are some xtra facts that 
might help.
Fungal compost was innoculated with humic acid-mollasses 7 days befor 
brew.
50% compost 50% vermicast.
My brewer has a air diffuser with the compost suspended in a big tea 
bag in the top of the tank, the bubbles do all the work.
One thing I did different with this brew is use weat germ oil to 
control the froth, it worked.
All so I inocculated the compost with soil(full of fungi)from our old 
growth native forest.
I will keep experimenting.
