Reports in the scienitific literature say copper is toxic to a number of bacteria at 3 ppm. As far as I have been able to discern, it is the bacteria that are more susceptible to copper than the fungi. But we have not done testing on copper concentrations in tea, mostly because I am happy with the research papers on copper toxicity.
It's the sulfur that seems to take out many of the beneficial fungi. We have some observation of this, but also a fair number of research literature papers showing the same thing.
