Thanks, Elaine, for the explanation. I am left with a dumb question.
In general, you describe the aerobic "brewing" or culturing process as
robust. With the right collection of micro-beasties, the tea should be good
stuff. ie) good guys will out-compete the bad guys, such as E coli.
So why then the concern about cleaning the brewer each time? There might be
a bio film left behind but it should be from an aerobic culture, hence not
bad guys, and the compost collection of organisms should overwhelm it
anyway. What am I missing?
