The critical point to understand is that it is the amount of fungal food, which is to say complex sugars, complex proteins, etc present in the material, that is important.
Next question -
Is a complex sugar a better fungal food than a complex protein? The complex protein is a better food. But we have some of this relativity to yet understand. Is a slightly less complex protein better fungal food than a bit more complex sugar? Don't know that yet.
