The fungi build soil structure, and thus oxygen and water gets into the root system much more easily.  Instead of the water puddling on the soil surface, it moves into the soil where the roots need the water.  Less water is used, because the plants get the water you apply, instead of it channeling through hte soil, or getting stuck on the soil surface.
