Lynton,

I do think it is possible to bottle tea. I think what is operating
here is an unclear understanding of the anaerobic aspect. I think
it worth holding out for some help from Elaine on this whole
question.

There are a couple of possible scenarios:

1. tea with food but no oxygen - anaerobe count of x?
2. tea with oxygen but no food - anaerobe count of x?
3. tea with "no" oxygen and no food (bottled tea) - anaerobe count
of x?

It's necessary to think through and understand what happens in each
of those conditions, and how conditions arise that lead to pathogen
growth.

Highly aerobic tea made from correctly made compost theoretically
will have a low pathogen count to begin with.

I am supposing: If the anaerobe population is low in tea sealed in
a bottle and left in a warm place, and the food is used up, the
bottle will not cave in or will not stink or will not puff out. IF
there's more food there AND low oxygen, I think that would support
the anaerobic bloom. I don't know to what extent the reduction of
food sources such as sugar could reduce the anaerobe population in
the face of the low oxygen. In other words, who grows when there's
no "food" except sleeping aerobes?

I would like to understand: First, what kind of oxygen levels do
food-starved inactive aerobes need? Any? Some oxygen can be left
in by not filling the bottle full. Exchange will be slow, but if
there's not food, then will it matter? Don't know.

It is my understanding that some of these sleeping aerobes (who are
asleep from lack of food, not oxygen) will die from lack of
something (food? oxygen?). I think this is the diversity part.
Maybe there are a few anaerobes and they do some chowing down -
don't know.

I would like you to have complete and correct info from which to
draw your conclusions. I think some good ideas have been put out
there, but we're not there yet.
