C:N ratios are easy to get from the Cornell/NRAES
manual mentioned below.

Keep in mind there are two Cornell publications
on composting of special interest:

On-Farm Composting Handbook (NRAES-54)

Natural Resource, Agriculture, and Engineering Service

I recommend *both* of these for the farm composter's
bookshelf.
