To be precise, it's THE ENCYCLOPEDIA OF COUNTRY LIVING, subtitled
"An Old Fashioned Recipe Book," by Carla Emery, published by
Sasquatch Books, 1008 Western Ave, Seattle WA 98104.  (I happened to
have it on my desk when I saw the posting above.)

The Sasquatch Books version is the Ninth Edition, and is a telephone-book
sized paperback, rather than the original three-hole-punched mimeographs.
Wonderful book.  I can't praise it enough.  Everyone needs a copy.  It
not only gives you recipes, but tells you how to grow all the ingredients!
The poultry section (my special interest) is extremely throrough and
practical.  The rest seems to be just as good to my inexpert eye.

I hear that, after a long hiatus, Carla's doing the craft fair circuit
again, selling her books.  Her kids are grown now, though, so the
whole troupe is no longer with her.
