There is a book called <<The New Organic Grower>>, written by Eliot 
Coleman and published by Chelsea Green Publishing Company of White River 
Junction, Vermont (revised and expanded edition published 1995).  It is 
available through the Maine Writers and Publishers Alliance, 207-725-0690. 
 $19.95 paperback.  It has some figures on the per-acre cost of managing a 
small organic vegetable farm.  Not scholarly, but apparently based on much 
experience.
