Re: purslane
It is a pity to cook purslane, or any other edible weed. As soon as you
heat a food beyond 110-120 o F, you destroy the enzymes in it. It is a
shame people do not realize the importance of enzymes, that make reactions
possible. Purslane is so easy to use in salads, and people would be in
much better health if they ate food raw.
There is a book by Elizabeth Baker: Uncook Book. She attained excellent
health when she turned to eating foods raw. Another is Gourmet Uncook
Book. Everyone should read these.
In Organic Gardening for dec 96, pp 39-43, Dr. James Duke tells of edible
weeds. He has now retired from USDA. His big book on herbs, $300 with its
companion book of charts, has an enormous amount of info. He is surely
the world authority on herbs. The USDA had him research that topic for 25
years.
