I'm not sure about names, but I know that the University of Kentucky
Agriculture Extension Service has published information/tech support
stuff regarding emus and I think ostriches.  Might dig around in
gophers for Kentucky.

Hello Everyone,

I am currently searching for information regarding two rare breeds
of poultry; namely Ancora and Hamburg chickens. Can anyone supply me
with, or point me in the direction of such information? (either printed
or electronic). I am specifically interested in the difficulties 
associated with breeding Ancoras and Hamburgs.

Any help would be greatly appreciated.
