	Epazote, like many herbs, should be harvested when it
has plenty of leaves and before it blooms.  The flavor is
different if you let it bloom; besides, by not letting one's
herb plants bloom, one prolongs their producing life a bit.
If you have enough time before first frost to get more leaves
off the plant, just trim 2/3 of the plant's height off.
Otherwise you may as well harvest the whole plant.  The young
(non-tough) leaves are used in cooking, but I suppose older
leaves would work too.
