In saturated fats the carbons have no double bonds. This causes the hydrocarbon chains to be straight. It also makes them easier for you body to break down
In unsaturated fats the carbons have double bonds. This causes the hydrocarbon chains to be crooked and bent. It also makes them harder for you body to breakdown
