Mounted photos are always problematic. I doubt that the fading has anything
to do with the photos being mounted, even on acidic paper. It sounds as of
your photos are on resin-coated paper, covered on both sides by a thin
polyester film, Are the photos in color from the '60s and '70s? That era
is noted for unstable films and papers, especially those by Kodak. The
fading is probably due to the film and paper or the processing. My family
has an album (black paper, unknown adhesive) covering 1940 to ~1960, all of
the old-fashioned B&W prints are in great shape. Am I about to remove the
photos because they are not in "archival" albums? No way.
I'd think twice or thrice before trying to remove the photos. Not only do
you destroy the context of individual prints, you also run the risk of
permanently damaging the them. If it ain't broke, don't fix it.

layer of paper remains on the page, but there is still an additional layer
of paper, with the other side of the adhesive material, still attached to
the photo (the photo is thicker than is normal). If I try to remove the
remaining adhesive, the original shiny back of the photo comes off as well,
but the photo is still intact. Is this acceptable, or should I leave the
adhesive/backing in place.
