Here is an excellent tutorial video created by Tim McNinch on YouTube. He reads through the alphabet letter by letter, giving several words as examples. The dipthongs are treated separately in the second link. Double consonants are not treated, but can be seen in many examples.

Ομιλειν [Omilein] is a course in Ancient (Koine) Greek newly developed (2018) by Jordash Kiffiak. Kiffiak uses the Restored Koine pronunciation. The first lesson is free after a sign-up. He has good, consistent pronunciation. Taking his first lesson will give a good taste of the Restored Koine scheme.

I'm a beginner and just joined the forum. I can't find what the pdf means by "€" as the pronunciation for β. I did some searches without any luck.

Which particular pdf?
As for β, during the Koine period (approximately 300 B.C.-A.D. 300), it was pronounced like /v/ in English "victor", "vote", etc. Thus, in Modern Greek, which carries forward much of the same pronunciation, the name of the letter β is /veeta/.

That symbol is supposed to be a W with a caret over it. I wrote that sheet for my Malawian students. That symbol in Chichewa orthography represents a bilabial fricative. Whereas a V sound is made with the top teeth and lower lip, the bilabial fricative is made with upper and lower lips.
