Hi Arron
Others have given listed several excellent choices for more scholarly works,
but since you also request texts for the "laity" (by which I infer you mean
more popular accounts), probably the premier recent text is Bart Ehrman's
_Misquoting Jesus_. While some might find the title a bit, well, odd, the
book does provide an excellent popular overview of the techniques of
NT textual criticism with many detailed examples.
