{"id":1211,"date":"2009-02-16T05:58:05","date_gmt":"2009-02-16T13:58:05","guid":{"rendered":"http:\/\/www.ibiblio.org\/carrborocitizen\/mill\/?p=1211"},"modified":"2010-07-30T06:02:36","modified_gmt":"2010-07-30T14:02:36","slug":"potage-of-sweet-potato-lentils-and-sage","status":"publish","type":"post","link":"https:\/\/www.ibiblio.org\/carrborocitizen\/mill\/2009\/02\/potage-of-sweet-potato-lentils-and-sage\/","title":{"rendered":"Potage of sweet potato, lentils, and sage"},"content":{"rendered":"<p><strong>Recipe Provided by: Dorette Snover, chef and owner of C&#8217;est Si Bon Cooking School<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<blockquote><p>2 tablespoons olive oil<br \/>\n1 2\/3 cups coarsely chopped onion<br \/>\n1 large clove garlic, coarsely chopped<br \/>\n6 slices prosciutto<br \/>\n2 fresh sage leaves, chopped<br \/>\n1 cup red lentils<br \/>\n6 cups no-salt-added chicken stock<br \/>\n1\/8 teaspoon hot pepper flakes, optional<br \/>\n4 cups cooked sweet potatoes<br \/>\n2 cups heavy cream<br \/>\nsalt and freshly ground black pepper to taste<\/p><\/blockquote>\n<p><strong>Procedure:<\/strong><\/p>\n<p>heat oil in a heavy soup pot large enough to hold all the ingredients. Saut\u00c3\u00a9 onion until it begins to brown (about 10 minutes). Add garlic and saut\u00c3\u00a9, stirring, for 30 seconds. add prosciutto. crisp and remove. when cool, chop and set aside for garnish. <\/p>\n<p>add sage, lentils, stock and bring to a boil. add hot pepper flakes, sweet potatoes, and heavy cream. reduce heat and simmer for about 30 minutes until lentils are soft. garnish with chopped prosciutto.<\/p>\n<p><em>The Carrboro Year Round Farmers&#8217; Market is open every Saturday from 9am-Noon on the Town Commons next to Town Hall.
