{"id":1911,"date":"2009-07-10T09:24:12","date_gmt":"2009-07-10T17:24:12","guid":{"rendered":"http:\/\/www.ibiblio.org\/carrborocitizen\/mill\/?p=1911"},"modified":"2009-07-10T09:24:12","modified_gmt":"2009-07-10T17:24:12","slug":"cold-cucumber-soup-with-herbs-2","status":"publish","type":"post","link":"https:\/\/www.ibiblio.org\/carrborocitizen\/mill\/2009\/07\/cold-cucumber-soup-with-herbs-2\/","title":{"rendered":"Cold Cucumber Soup with Herbs"},"content":{"rendered":"<p><strong>From Sheri Castle of Creative Cooking with Sheri Castle<\/strong><\/p>\n<p>If the soup is a bit bland for your taste, shake on a little hot sauce or stir in a bit of your favorite salsa.<\/p>\n<p>1 pound small, firm cucumbers<br \/>\n1 tablespoon white wine vinegar<br \/>\n2 teaspoons salt<br \/>\n2 cups whole-milk yogurt or sour cream<br \/>\n1\/2 cup whole milk or buttermilk<br \/>\n2 tablespoons chopped dill, plus more for garnish<br \/>\n2 tablespoons chopped mint, plus more for garnish<br \/>\n1 to 2 cloves fresh garlic<br \/>\nSalt and pepper<\/p>\n<p>1.Peel half of the cucumbers, but leave the skin on the rest.  Halve all of the cucumbers lengthwise and scrape out and discard the seeds. Coarsely chop or grate the cucumbers and toss with the salt. Transfer to a sieve and let stand over a bowl for 30 minutes.<br \/>\n2.Transfer the drained cucumbers and 2 tablespoons of the liquid to a food processor or blender.<br \/>\n3.Add the sour cream, milk, garlic, dill, and mint. Pur\u00c3\u00a9e until smooth.
