We have traveled to Spain and really enjoy the flavors and ingredients of that area. Also, the recipe allows us to use the great fresh shrimp and produce of North Carolina. It is a simple dish and can be easily prepared by most anyone. A crisp white like a Muscadet or Albarino would go well with it.\u00e2\u20ac\u009d \u00e2\u20ac\u201c Susan and Dick Barrows<\/p>\n<p><strong>Basque-Style Shrimp <\/strong><br \/>\n<em>Ingredients:<\/em><br \/>\n32 medium shrimp, peeled and deveined<br \/>\n\u00c2\u00bd tablespoon chopped garlic<br \/>\n2 leeks, cleaned<br \/>\n1 tablespoon capers<br \/>\n1 medium Spanish onion, diced<br \/>\n1\/2 cup white wine<br \/>\n2 links chorizo, sliced<br \/>\n1\/2 cup cooked Gigante beans<br \/>\n1\/4 teaspoon saffron<br \/>\n1\/4 cup pitted black olives<br \/>\n3 plum tomatoes, diced<br \/>\n1\/4 cup olive oil<br \/>\n<em>Procedure:<\/em><br \/>\nSlowly render the chorizo in the olive oil, and then saut\u00c3\u00a9 the onion and leeks until soft. Add the white wine, tomatoes and all other ingredients except the shrimp. Simmer for five minutes.<br \/>\nSaut\u00c3\u00a9 the shrimp in a little olive oil for one to two minutes and then add the pre-made sauce.
