So the whole idea behind this dish is to let the vegetables speak for themselves. Just slicing the vegetables really thin and marinating them in a dressing with fresh herbs is the only way to go. \u00e2\u20ac\u00a6 This is a great foundation recipe, so people can understand the concept and then change and develop the recipe to suit themselves. To me, that\u00e2\u20ac\u2122s the most rewarding aspect of giving a recipe: when people understand it and are confident about changing it.\u00e2\u20ac\u009d \u00e2\u20ac\u201c Colin Bedford<\/p>\n<p><strong>Vegetable Escabeche<\/strong><\/p>\n<p><em>Ingredients<\/em><br \/>\n1 red onion<br \/>\n3 sticks of celery<br \/>\n1 fennel bulb<br \/>\n2 carrots<br \/>\n1 piece of pumpkin or squash<br \/>\n2 red peppers<br \/>\n2 yellow peppers<br \/>\n2 green zucchini<br \/>\n2 yellow squash<br \/>\n1 bunch cilantro<br \/>\n1 orange, zested<br \/>\n2 limes, juiced<br \/>\n1 cup olive oil<br \/>\n1\/2 cup sherry vinegar<br \/>\n2 tablespoons honey<br \/>\n1 tablespoon crushed coriander<\/p>\n<p><em>Procedure<\/em><br \/>\nThinly slice vegetables and chop cilantro and combine in a bowl. Combine the oil, vinegar and honey. Add the zest, juice and coriander.
