[compost_tea] Vegetable quality



One thing I would love to see entered into the "giant vegetable" 
discussion vis-a-vis compost tea is vegetable quality. It seems that 
produce quality (vitamin, mineral, sugar = taste, etc.) gets 
forgotten in the discussion. After all, the purpose of food is to 
sustain the human body, and the best produce will do the best job of 
feeding the body what it needs. Therefore, I'm curious on two fronts:

1. Documentation of the impact of CT on fruit/veg quality

2. Documentation that bigger fruits/veggies are necessarily a better 
quality than smaller

By "quality" I mean higher vitamin and mineral content. The best 
quick test seems to be Brix readings, but what other documentation is 
available? It seems the organic growing industry harps more on the 
ABSENCE of dangerous substances (chemicals) than the PRESENCE of 
helpful substances (vit/min/sugars). I'm assuming that CT makes 
better veggies which is why I use it. But I wonder how much testing 
has been done to prove it?
