After the initial setup and blending, the whole mess will need to simmer for about 2 hours.<\/p>\n<p>Mix the Mixed Spices in a bowl large enough to hold all the lamb, then dredge the lamb cubes in the spices.<\/p>\n<p>Heat oil for browning the lamb and once hot brown the lamb scraping the spices and other good stuff as you go. <\/p>\n<p>Remove the lamb and add the onion and garlic (and a little more oil if needed). Cook until the onion is transparent.<\/p>\n<p>Add the roots and fruits stirring frequently until all are well mixed.<\/p>\n<p>Add the lamb and any spices in the bowl to the mix.<\/p>\n<p>Add the zest and cinnamon sticks.<\/p>\n<p>Add the broth or water (enough to cover) and bring the whole thing to a boil.<\/p>\n<p>Reduce to a simmer and let it slow cook for 2 hours. The roots and fruits will begin to make a glaze and a kind of delicious mush.<\/p>\n<p>Serve alone or over couscous.<\/p>\n<p>Garnish with fresh herbs.<\/p>\n<p>Also known in our house as &#8220;Lamb with Roots and Fruits.&#8221;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 pound of lamb in cubes<\/p>\n<p>olive oil (as needed)<\/p>\n<p><strong>Mixed spices:<\/strong><br \/>\n1 teaspoon cinnamon<br \/>\n2 teaspoons coriander<br \/>\n1 teaspoon cumin seeds<br \/>\n3 teaspoons cumin<br \/>\n2 teaspoon turmeric<br \/>\n1 teaspoon paprika<br \/>\n1\/2 teaspoon of fennel seeds<\/p>\n<p>1 onion*<br \/>\n3 garlic cloves<\/p>\n<p><strong>Diced Roots:<\/strong><br \/>\n2 medium golden beets*<br \/>\n6 small turnips*<br \/>\n1 medium sweet potato*<br \/>\n1 or 2 carrots<br \/>\n2 or more Tablespoons of fresh ginger<\/p>\n<p>2\/3 cups each of<strong> Diced Fruits<\/strong>:<br \/>\ndried apricots<br \/>\ndried prunes<br \/>\ndried papaya<br \/>\ndried cranberries <\/p>\n<p>2 &#8211; 4 cups of broth or water<\/p>\n<p>2 cinnamon sticks<br \/>\n2 teaspoons of freshly grated lemon zest<\/p>\n<p><strong>Garnish:<\/strong><br \/>\nfresh mint+<br \/>\nfresh fennel (bronze)+<\/p>\n<p>*From local farmer&#8217;s market<br \/>\n+From my herb garden<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The trick here is slow cooking tagine-style so don&#8217;t be in a hurry.
