If you stop the growth, the plant won't have energy to produce more blooms.
The plant gets its energy for blooming from the leaves, so removing them will
likely kill it. The leaves will eventually finish their job of replenishing
the bulb, however, so once they turn yellow and drop off, you can put the bulb
in a cool, damp spot till you're ready for it to bloom again (I think six weeks
is the minimum, but I'm no Amaryllis expert.)
