Well, I kind of like to make dill pickles with them. Just use whatever
pickle protocol you use, but substitute tomatillos for cukes. They're great
that way. You can eat them as pickles, or chop up finished pickles and mix
them with tomato sauce for an odd sort of salsa.

And then again, you can eliminate the dill and substitute its cousin,
cumin. It's still good as a pickle, and can also be chopped for salsa.
