Lucky you with all that room! I also have concerns about weed killer since I'm
near a river and garden organically. I'd start small. Clear some areas for next
year's planting or raised beds by watering thoroughly then pulling out the
weeds. I'd probably rototill, then I'd layer with newspaper, 5-8 sheets thick
and throw down a thick layer of something like alfalfa (or even bedding straw
which is cheaper) which will eventually decompose and improve the soil for
future planting. I definitely would not attempt to tame the whole space at one
time. Sounds like a lot of work, huh? Guess so. But well worth it, if I were
you.
