What are the texts of Koine Greek?

Greek texts such as the New Testament, The Greek Old Testament (Septuagint/LXX), Patristic Greek texts, Papyri, and other Greek writings of the New Testament era. Discussion must focus on the Greek text, not on modern language translations, theological controversies, or textual criticism.

Hi,
I'm interested in learning Koine Greek, but I'd like to know what types of texts are available beyond the New Testament. I know Marcus Aurelius' Meditations is a viable option, but are there any other important Koine works?

I've also read that if you know Koine Greek, you can learn Attic Greek without much effort—so Plato and Epictetus are also accessible. But more specifically, what Koine works can I expect to read beyond the Bible?

Any resources, text suggestions, or study tips would be very welcome!
