[B-Greek] /sh/ sound?

Hello,

How best would you express the English /sh/ sound 
in ancient Greek?

My first guess was to trace it through Judges 12:6, 
because that passage turns on the pronunciation of 
the /sh/ sound.  But as you can see below, the 
translators of the LXX chose not to transliterate it.

Anybody know?

Judges 12:6a

KJV:
Then said they unto him, Say now Shibboleth: and he 
said Sibboleth: for he could not frame to pronounce 
it right . . . .

LXX:
KAI EIPAN AUTW EIPON DH STACUS KAI OU KATEUQUNE(N) 
TOU LALHSAI OUTWS . . . .

My rough translation of LXX:
And they said to him, "Say 'grain', right now!"  
And he could not pronounce it clearly . . . .
